“OLEA EUROPEA SATIVA” is the family of olaceae to which all olive trees belong, which with more than 500 varieties are present in Italy, which are called ” CULTIVAR.”

Umbria is its main area of spread, being present in all olive-growing areas. The tree,with moderately dense foliage, has the fruiting branch tending to be erect, with the fruit spherical-ovoid in shape, slow maturing with a color transition from dark green to purplish red to black. The oil, medium to intensely fruity, green in color with yellow highlights, is balanced in taste with good spicy bitter sensations.

PAIRINGS: It is preferred for use on bruschetta, barbecued meats, grilled meats, pinzimoni and wherever a strong flavor is desired.
